Lety's Burrito Shack started with a simple conviction: a burrito should taste like someone actually made it — not like it came out of a freezer and spent three days in a warming drawer.

Every tortilla is stretched by hand. Every filling is cooked from scratch. The salsa is made in small batches each morning. We source what we can locally and treat every ingredient like it matters — because it does.

If you drive past Trail Gulch Road in Gypsum and catch the smell of cumin and roasting chiles, that's us. Pull in. We'll have it ready.
